Alternative grains for baking

The Christmas and holiday break has given me some great opportunities to experiment in the kitchen with alternative grains. I've made zucchinni muffins with both teff flour and chia flour. These flours are so rich in nutrients. Although I have an allergy to wheat and find it necessary to use these alternative baking ingredients, I believe that every one may benefit from diversifying their diet with these little nutrient powerhouses.
